These cookies are more like macaroons, but they are so yummy! 

The only sugar in this recipe comes from the organic cane sugar in the sweetened condensed coconut milk. If you choose to cut back entirely, you can make your own sweetened condensed coconut milk with maple syrup or coconut sugar. 

What you’ll need:

2 cups unsweetened shredded coconut 

1/2 cup dairy free dark chocolate 

3 tablespoons chopped salted almonds

3/4 cup sweetened condensed coconut milk 

Steps: 

Preheat the oven to 325°F.

In a medium bowl, mix shredded coconut, chocolate chips, chopped almonds, & sweetened condensed coconut milk until dough is sticky. 

Use a cookie scoop to place on parchment lined baking sheet. 

Press the cookies a bit to flatten & bake cookies for 12-14 minutes or until the coconut flakes become golden brown. 

Let cool completely before serving.
