Missing out on these fan favorites?

This recipe requires no gluten, no dairy, & no sugar! But trust us, it tastes exactly like the old-fashioned “Samoa” cookies you know & love. 

When starting health protocols that require a lifestyle & diet change, trying to find good recipes can be very difficult. This recipe will be great for those who have a sweet tooth without sacrificing health needs.

What you’ll need:

1 cup pitted medjool dates (about 10)

1 cup unsweetened shredded coconut

1/3 cup dairy free dark chocolate 

1/2 teaspoon coconut oil 

Steps: 

Preheat oven to 400°F. Spread the shredded coconut onto a baking sheet to toast. Place in oven for 3-5 minutes, until coconut is a light golden brown color.

Add dates & toasted coconut to food processor. Pulse until mixture is combined.

Remove from food processor & form dough into small round cookies. Use a straw to punch a hold in the middle of the dough.

Place all cookies on a parchment lined sheet & transfer to the freezer to harden. 

While cookies are in the freezer, add chocolate & coconut oil to a microwave-safe bowl (or a double boiler). Melt chocolate.

Take cookies out of the freezer & dip each one in the chocolate. Then drizzle a bit of chocolate on top. 

Transfer cookies back to the freezer to let chocolate harden. Once hardened, store in fridge until ready to eat.
