Gluten and its Thyroid Connection
The protein in gluten (found in wheat, barley, spelt…) is gliadin, and it wreaks havoc with both the brain and the thyroid gland. Dr. Conners talks about this in detail in his Autoimmune COURSE but gives a quick summary here:
