Want an easy lunch meal?

This meal is so yummy & incredibly simple to make! It takes a few key ingredients, but you can switch it up to your liking. This is also great for meal planning, as you can eat it cold or simply heat it up quickly on the go!

What you’ll need:

1 salmon filet

1/2 cup sweet corn

1 cup rice

2 tablespoons cilantro

1/4 cup red peppers

1/2 avocado 

1/2 juiced lime

Salt & pepper to taste 

Steps:

Before creating this bowl, we made our organic white rice & salmon filet separately. We made our salmon simply, with some rosemary, salt & pepper & lime on top. We air fried our salmon at 350 F for 10 minutes, flipping it half way through. 

Add your rice to the base of your bowl. 

Chop up avocado, cilantro, & red pepper into fine bits. Add these ingredients plus heated corn to the bowl (we used corn from our recent fall harvest). 

Once all main ingredients are added, juice 1/2 lime on top, plus salt & pepper to taste.

Mix well together & enjoy!
