Pineapple & Coconut Overnight Oats

These overnight oats will taste like a Pina Colada, but without the sugars & alcohol of course. This recipe is full of great vitamins & tons of potassium thanks to the coconut water! It is light & refreshing for those hot summer days! 

Even though coconut water is a great source of minerals, you can substitute it with coconut milk to make this recipe a little creamier. 

What you’ll need: 

1/2 cup old fashioned gluten free oats

1/2 cup fresh coconut water

1/2 cup chopped pineapple

1/4 cup plain greek yogurt or dairy free yogurt 

1 teaspoon maple syrup or honey

1/2 teaspoon vanilla extract

Pinch of sea salt

Optional: top with toasted coconut 

Steps:

Place all ingredients in a container & mix well together. Seal with a lid & place in the fridge overnight.

In the morning, take container out of the fridge & stir. You may need to add a little more coconut milk, as the oats will soak up the liquid. 

Top oats with additional pineapple & toasted coconut or any other toppings & serve!
