Nothing’s better than apple pie on a cool autumn day! 

This recipe is great for those who are avoiding gluten, dairy, & refined sugars or just want a healthier option to an apple pie! 

F I L L I N G

What you’ll need:

3 1/2 cups of apples 

1 tablespoon lemon juice 

1/4 cup of water

2 tablespoons cornstarch 

2 tablespoons maple syrup 

1 teaspoon cinnamon 

1/4 teaspoon nutmeg 

Steps:

In a pan, place apples, lemon juice & water on medium heat until apples begin to soften.

Add the rest of the ingredients & mix well. Bring mixture to a simmer & cover with a lid. 

Set aside while simmering to make your crust. 

C R U S T

What you’ll need: 

1 cup medjool dates (unfitted) about 10 dates

1/2 cup unsweetened shredded coconut 

1/2 cup unsalted almonds

Steps: 

Add all ingredients to food processor or high powered blender & pulse until sticky. 

Place plastic wrap over muffin tin to keep the crust from sticking to the tin. 

Use a spoon to scoop mixture into the pan & press until it forms a crust. 

Place in freezer for about 5 minutes to set up, then add the apple pie filling. 

Once filed with apple pie filling, place in freezer for about 30 minutes to set up. Allow to thaw for about 10 minutes before serving.
